Day Before Mashed Potatoes

turned out very well on Thanksgiving. Even my MIL who turned her nose up when I told her I'd do the potatoes the day before and heat them up in the crockpot, remarked later how good they were. I left them a little long in the crockpot and the bottom got a nice brown crust . That was my MIL favorite. So all were happy.

To Die For Blueberry Muffins

These muffins are amazing. I bought Texas size muffin pans and doubled the recipe. I got 11 muffins, I might have gotten all 12 if I'd spread the dough a bit. They got nice and high, just like you would get at one of the Coffee House places. I had to adjust the temperature, I went to 375 and they still got very dark at the bottom. So next time I will bake them at 350, my oven seems hot anyway. I had Baker's secret muffin tins and I sprayed the whole things with PAM, I then floured one pan and left the other one without. The ones that were floured came out easier and did not get as dark. Overall I give 5 stars, the recipe rocks! It's a keeper and will definitely be used over and over. Thanks.
