Traditional Osso Buco

If there were 6 stars, this dish would get them all! I followed it almost to the letter, substituting veal stew meat, (becasue I had it on hand). I was prepping a few meals and this one was stored two days in the fridge (without the last ingredients) The sauce thickened on it's own. Served with Orzo. This was the BEST I've ever tasted!

Sweet-and-Sour Chicken

Very nice recipe, but I would prefer a recipe that makes the sweet and sour from scratch as I never have sweet and sour in the house. The jarred kinds just aren't very good.

Chocolate Mint Grasshopper Pie

Very nice. I'm not very fond of Cool Whip, so I used whipped cream in my version. It turned out light, fluffy and delicious. This recipe is a keeper.

Fudge Chunk Brownies

We loved these brownies! I omitted pecans b/c we don't care for nuts in our brownies. Also, I only had 2 oz. of semi-sweet chips so I had to use the other 2 oz. as white chocolate! Delicious! If you like a fudgey, rich brownie try this one!

Lemony Sweet Potato Pie

I gave this recipe three stars, because I made some changes to it. In my family and among my friends this is the basic sweet potato recipe without the lemon extract. I make it with the lemon extract on occasion and it is delicious. I just can't inagine a sweet potato pie with nutmeg and cinnamon, but that's me. The water isn't really necessary. I can't see what purpose it serves. You can use a little more milk, if you like and just eliminate the water. I bake my potatoes instead of boiling them and that way they're not soupy or water logged. A pound of potatoes is about 2 cups, mashed. so you cna weigh them to have the right amount. I always use frozen deep dish pie shells and I get two pies out of this batter. Tip: Sweet potatoes are real stringy and I don't know many people that will use a seive or a food mill. Put your cooked potatoes in the bowl and use a paddle beater. The strings will attach to the beater (actually any kind of beaters) and you can rinse them off. Do that about three times. That way your pies won't have all those strings in them. I hate that!

Hamburger Potato Casserole

I served this with a dollop of sour cream on top. I also used half sweet potatoes and half Russet potatoes. It was very good, very easy to make, and inexpensive. I think I will probably make it again. I think that you could also add some different kinds of root vegetables to make it more nutritious, and it would probably still taste good. Yummy comfort food. :)

Thai Chicken Pizza

This was a pretty good pizza. It's been a while since I've had the CPK Thai chicken pizza (at the restaurant or frozen from the grocer), but from what I remember (and what I read on the CPK website) this is pretty close to authentic. I prefer red sauce pizzas, but thought this was a nice change of pace. My bf didn't care for this. He particularly did not like the shredded carrot, bean sprout, peanut & cilantro garnish (he thought I added too much), but otherwise he liked it too. I used Kikkoman brand peanut sauce and added only 1/8 c. of creamy PB. I thought 1/8 c. was perfect (not too peanutty for us). I do believe that the brand of peanut sauce can make all the difference. My only change was to use mozzarella cheese instead of Italian-blend (and I didn't measure it). One suggestion.... I think this would have turned out even better had I layered my pizza crust with cheese FIRST, followed by the chicken (I used an 8 oz. bag of grilled chicken strips, cut up and tossed with 3 T. sauce) and green onions. Oh, and the garnish is a MUST, albeit used sparingly. You must try this one! Thanks for sharing this great last-minute, I don't know what to make for dinner recipe :)
