Irresistible Pecan Pie

This pie was so easy to make and had good consistency. Not too runny! I added 1 T. flour, 1 tsp. cinnamon, and 1.5 tsp. vanilla as suggested by other reviewers. Good pie. I will make it again.

Tri-Color Chopped Salad with Pine Nuts and Parmesan Cheese

Excellent! I could not find just arugula so I substituted a pre-washed blend of arugula & baby spinach (by Organic Girl) and it was great. I let the dressing "sit" for a bit on the lettuces and it was perfect. I served this at a dinner party and it was a big hit. I will definitely make again.

Busy Day Chicken Rice Casserole

I changed a few things about this recipe due to others' comments. I used cream of chicken w/herbs & broccoli cheese soups. Instead of mushrooms, I added 2 cups of frozen broccoli florets. I used 1 cup of brown rice (make sure it's parboiled) so I increased the water to 2 cups (well, I used chicken broth). All I did was sprinkle salt & pepper on the SIX chicken breasts and I baked it at 350 for 1 hour. It was great!
