Missouri

Missouri touches on no fewer than eight other states – that’s a record (actually a tie with Tennessee, one of Missouri’s border states). Lewis and Clark began their great journey from St. Louis, Missouri, which explains Missouri’s nickname “Gateway to the West.” The Show Me State is a Midwestern state, though the Mississippi River (its border to the east) keeps it firmly anchored to the South. As in the South, Kansas City folks take their barbecue very seriously. Though unlike some Southern approaches, Kansas City barbecue is fairly inclusive, permitting both pork, like in the Carolinas, and beef, like in Texas. St. Louis, Missouri, in addition to being a big brewery town, also boasts a couple local takes on ethnic cuisine. The deep-fried ravioli is one, and the St. Paul sandwich is another. (Don’t be fooled by the name, which would seem to imply a Minnesota connection, the St. Paul is St. Louis through and through.) It consists of deep-fried egg foo young served on slices of white bread topped with pickles, lots of mayo, lettuce, and tomato. Folks in St. Louis find them at Chinese restaurants.

Mama D's Italian Bread

I have been making homemade breads for years, and this one just didn't make the cut. I made a slight change to the amount of flour, and subbed about 1/2 cup of oil for some of the water. Also, it didn't rise when I tried having the oven light on. I had to revert back to setting my oven on warm and misting while I waited two hours for it to triple in size. Even that is a bit long. The flavor was okay, but next time I will add some fresh herbs. I liked how the crust turned out, and it wasn't too hard since I only baked it for 25 minutes. It's a good recipe, but I will stick with my own. :)

Thai Chicken Pizza

This was a pretty good pizza. It's been a while since I've had the CPK Thai chicken pizza (at the restaurant or frozen from the grocer), but from what I remember (and what I read on the CPK website) this is pretty close to authentic. I prefer red sauce pizzas, but thought this was a nice change of pace. My bf didn't care for this. He particularly did not like the shredded carrot, bean sprout, peanut & cilantro garnish (he thought I added too much), but otherwise he liked it too. I used Kikkoman brand peanut sauce and added only 1/8 c. of creamy PB. I thought 1/8 c. was perfect (not too peanutty for us). I do believe that the brand of peanut sauce can make all the difference. My only change was to use mozzarella cheese instead of Italian-blend (and I didn't measure it). One suggestion.... I think this would have turned out even better had I layered my pizza crust with cheese FIRST, followed by the chicken (I used an 8 oz. bag of grilled chicken strips, cut up and tossed with 3 T. sauce) and green onions. Oh, and the garnish is a MUST, albeit used sparingly. You must try this one! Thanks for sharing this great last-minute, I don't know what to make for dinner recipe :)

Slow Cooker Lasagna

Hmmm..well, this is middle of the road for me. It is a good idea for a quick and simple way to make a "mock-sagna." That said, I had some issues. I read the reviews and saw where many had issues with gummy noodles, so I wanted to try to fix that. Also, my family doesn't like sausage in their lasagna, so I used burger...about 1 1/2 lbs. Oh, and I am one of those people that doesn't like ricotta in my lasagna, so I used cottage cheese. So, burger, 1 box of bowtie noodles, 2 jars of sauce, 1 container of cottage cheese, parsley, and the mozzarella. Now, I figured I would cook it for about 3 hours on low. It looked good. It smelled good. It even mostly tasted ok (for being jarred sauce and all). Still had gummy noodles...like really gummy. And, heaven help me for saying this, too much cheese! I love cheese...I do! But between the gumminess of the noodles and the amount of cheese, this was bordering on a really bad texture for me. Being the way that I am, I'll probably try this again just to see if I can catch it before the noodles get gummy (and cut back the cheese a little...sigh). It's a great idea! It just needs some tweaking!
