The Pine Tree State borders Canada on three sides. It also shares a border with New Hampshire and has a long, rocky coastline along the Atlantic Ocean, making Maine the only state in the contiguous forty-eight that shares a border with just one other state. Maine also sets itself apart by being the only state in the Union whose name can be spoken in one syllable. Maine is synonymous with lobster. But because early colonists considered them barely edible, commercial lobster fishing did not get started in Maine until the mid-1800s. It was cod that first enticed Europeans into crossing the Atlantic to fish off the banks of coastal Maine, even before the pilgrims reached the North American continent in 1620. Maine is not all seafood. Other specialties include wonderful blueberries and fiddlehead ferns. The countryside is 90-percent forested with lots of wild game, including moose, deer, and bear, making it a prime place for hunters. Like Louisiana, Maine has a sizeable Acadian community. Driven from eastern Canada by the British in 1755, many Acadians settled in northern Maine, where their French-Canadian culture endures.

Angel Shrimp Pasta

I tried this last week and it was one of the best things I have ever cooked, my father a husband loved it and so did the kids...I couldn't find the cheese spread so I just bought a half pound of deli sliced jalapeno jack the land o lakes brand. it was amazing and it goes good with chicken a hamburger as well...I will definitely keep this a a weekly dinner.

Beezie's Black Bean Soup

I really enjoyed this soup and so did my husband. It made a lot, too much for the two of us, so we froze half of it. We added cheddar and sour cream just before serving and loved it.

Chocolate Pinwheels

I found this recipe very simple and the cookies turned out great. I didn't use chocolate in the recipe, but rather red and green food coloring for Christmas cookies as another rater suggested. Thanks for the recipe. Will be using again soon
