Another pretty dish. Tomatoes, green pepper and zucchini are sauteed until tender and their flavors have mingled. Rice and water are stirred in and everything is cooked until the liquid is absorbed and the rice is fluffy.

Shredded zucchini combined with bread crumbs, egg, mayonnaise, mustard and Old Bay Seasoning, and formed into patties and baked. The flavor of the Old Bay with the texture of the zucchini makes a great substitution for crab cakes. 

Veggie Fajitas

My family loves these peppery veggie fajitas! Serve the fajitas with flour tortillas, cheddar cheese, lettuce, tomatoes, sour cream, and I even put steamed broccoli on the side (so each can add broccoli if wanted).

Basil, oregano and olive oil, and lots of fresh vegetables are warmed together, sprinkled with parmesan, then baked in a casserole until hot and bubbly. Squash and zucchini never tasted so good.

Here's a great idea for leftover ham! Stir it into a hearty sauce of cream of mushroom soup, sauteed onions and shredded Cheddar cheese. Add cooked spaghetti, some chopped pimento and parsley for snappy color, then serve piping hot.
