Shrimp Scampi Bake

This recipe is delicious! I followed the advice of fellow readers and used less butter, and there was plenty of sauce for the shrimp and pasta. I used frozen raw shrimp and just shelled them before using. I put pasta in the bottom of ramekins then put the shrimp on top with a liberal amount of butter mixture. Then I baked for about 14 minutes. It came out perfect! Served with a green salad and crisp french bread...amazing!!!!

Chicken Rice Skillet

Carrot Oatmeal Muffins

I'm always looking for ways to use up leftover carrot pulp from our juicer and I decided to give this recipe a try, using two cups of pulp rather than the grated carrots. I also subbed 3/4 cup applesauce + 1/4 cup oil instead of the 1 cup oil (as suggested by other reviewers), omitted the pineapple because I didn't have any on hand, and increased the cinnamon to 2 tsps. These were wonderful! :D I'll definitely be making these muffins again and again.

Pumpkin Cheese Bread II

I had to double the cake batter recipe and should have doubled the cream cheese filling. I don't know how there was enough batter for 2 loaves. Next time I will try the bundt cake pan. It was just okay.

Chicken Pot Pie IX

It was very delicious. I will make agian for sure. I did, however, go by the advice of some of the other cooks. I brushed an egg white on the bottom shell, I added corn, I added about 1/4 teaspoon of garlic powder and some seasoning. I boiled the chicken and veggies in broth instead of water.

Chicken Enchiladas II

As long as you go into this knowing that it won't be like Mexican food, you won't be disappointed. My fiancee raved over these and guess what, he's not too crazy about Mexican food. I used corn tortillas and a larger can of diced green chilies which made it a bit spicey, but my picky girls still ate it.

Tomato-Cream Sauce for Pasta

I only did half and half and the can of tomato, and I blended with the hand blender like others. I made the mistake of letting the cream curdle, will avoid that next time. I think this would be way better with fresh tomatoes and fresh basil.

Doggie Biscuits I

All the dogs that tried these really enjoyed them,One dog, was whimpering to get at the rest of the bag!! hahahaha The only thing is, like other reviewers said, i think the proportions are a bit off. I used less water, per other reviewers and then i subbed some of the oil for bacon fat- but I think you can cut back on a 1/2 cup. the dough was so greasy I had to keep adding flour and oats and cornmeal. Dough was easy to roll on parchment paper, and i used regular cookie cutters and then to make a smaller bite size treat cookie for my Boston Terrier (and friends small dogs) I used a water bottle cap to cut out little circular cookies. We tried these, they were flavorless to us, but the dogs loved them and so did all the dog owners when i gave them as birthday party favors. Im going to make these again and again!!!

Basic Flaky Pie Crust

This turned out very good. The crust didnt get to brown, I used butter instead of shortening because they dont sell it where I live. The flavor was very buttery, but the Fiance said he loved that about it. I would have chosen to use shortening, but it did give a very rich crust flavor, probably amazing with banana cream pie. Reccommend to try.
