Amish Breakfast Casserole

Good but not great. Doubling the eggs is a must or else you'll get one stiff casserole. I made it to a T the first time - too stiff and too much hash browns. The 2nd time, I doubled the eggs and used only 3 cups of hash browns. This yielded a more tender casserole. Using sausage in the casserole and sprinkling chopped cooked bacon on top makes a tasty and good looking dish. I will make again with the revisions.

Butter Flaky Pie Crust

This is good, but the second time I used 50/50 shortening and butter and it was sublime! The shortening gave this crust amazingly flaky layers, just add another pinch of salt since the shortening isn't salted.
