The quintessential recipe, just like gram used to make. Green peppers are seeded and stuffed and baked. It 's that simple. The final topping of cheese melts down into the rice and tomato stuffing and makes it gooey and delicious.

This was the first vegetarian recipe I ever made--green peppers stuffed with a mixture of brown rice, nuts, dried cranberries, tofu and cheese. Substitute soy cheese for the Parmesan to create a vegan delight.

One of the few dishes that is better served cold rather than hot. Absolutely delicious and very Mediterranean!!! It can be made vegetarian by replacing meat with soya.
