4 cups chicken broth
1/4 cup uncooked wild rice
1 3/4 cups uncooked long grain rice
2 cups sliced fresh mushrooms
1/2 cup fresh broccoli florets
1 small onion, chopped
1/4 cup grated carrot
1/4 cup sliced celery
2 tablespoons olive or vegetable oil
5 cups cubed cooked turkey
1 (2 ounce) jar diced pimientos, drained
1 teaspoon salt
1/2 teaspoon dried marjoram
1/2 teaspoon dried oregano
5 tablespoons all-purpose flour
3 cups milk
1/4 cup white wine or chicken broth
2 cups shredded Swiss cheese
2 cups shredded Cheddar cheese, divided

DIRECTIONS
In a large saucepan, bring broth to a boil; add the wild rice. Cover and simmer for 25 minutes. Add the long grain rice; simmer 25 minutes longer or until tender.
In a large skillet, saute the mushrooms, broccoli, onion, carrot and celery in oil until tender. Add the turkey, pimientos, salt, marjoram and oregano. Stir in the rice.
In a large saucepan, combine the flour, milk and wine or broth until smooth. bring to a boil; cook and stir for 2 minutes or until thickened. Stir in the Swiss cheese and 1 cup cheddar cheese until melted. Add to turkey mixture.
Transfer to a greased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with the remaining cheddar cheese. Bake, uncovered, at 350 degrees F for 25-30 minutes or until heated through.

One piece of advice - I would use a large pot to mix everything in before you transfer to a 9x13 pan. The ingredients barely fit! This was good but I wasn't entirely happy with the taste of swiss cheese in the recipe. Next time I will use a different cheese.

This was very good. I used chicken instead of turkey, and I think it'd even be good with chicken sausage. I doubled the broccoli and carrots, and would even add a bit more next time. I love that this doesn't require any canned soups. The sauce is delicious!

I used leftover thanksgiving turkey for this recipe and I absolutely love it! I skipped the pimentos and used chicken broth instead of white wine but other than that followed the recipe. I'm sure that it could be adapted for different meats, which I intend to do so that I can have it throughout the year.

I tried this recipe for an Easter side dish because I was afraid my turkey may have been in the freezer too long and would be dry. This dish was the RAVE of Easter dinner! Very tasty and unique! I agree with the other reviewer about mixing all the ingredients in a LARGE mixing bowl instead of the skillet before placing in baking dish. There was very little room to mix in the skillet. This recipe will be a regular dish year-round!

I'm giving this a 4 star b/c I substitued so many ingredients. The recipe turned out well, very easy to prepare. I used 1lb ground turkey, browned & drained. I didn't have pimentos or celery and I used shredded carrots instead of grated. I also used frozen broccoli florets and chopped into bite size pieces before sauteeing. I added minced garlic, salt and pepper the vegs while I sauteed. The cheese sauce was really good...I like that this recipe uses this cheese sauce as a binder/thickener rather than a canned cream soup. The swiss cheese was a little sharp, I will probably make it with only chedder from this point forward. Husband and teen-aged son loved it, both had second helpings. I also scaled it down to 6 servings and it fit just fine in a 9x13 dish. I melted 3Tbl butter and mixed w/ 1 cup crushed cornflakes for a crunchy topping. Served w/ a tossed salad and crunchy french bread. Tasted very good, easy on preparation and very easy on the budget!

While looking for recipes to use up Thanksgiving turkey I came across this one. Very good but next time I would change the seasonings. Try increasing to 1 tsp salt, 1/2 tsp pepper, 1/2 tsp rubbed sage, 1/2 tsp crushed rosemary, 1/4 tsp paprika, and 1/2 tsp marjoram. These are the seasonings in our family's favorite turkey noodle casserole....DELICIOUS!!!!!!

I made this when my brother had a horde of friends up to play the new Halo, and being teenage boys, none of them cared what they ate, and it was a good time to use up our turkey. It did use up our turkey and it tasted pretty good, but the top part where the cheese was tasted the best. The rest of it needed something else to add more flavor, perhaps more cheese or spices, I'm not quite sure. But, it was a really good way to use up turkey and there was nothing left over after the boys got to it.
